  1. Preheat grill to medium-high heat.
  2. Sprinkle the Mandarin fish with salt and sugar on both sides.
  3. Heat vegetable oil in a large skillet over medium-high heat until hot. Add the fish to the skillet and cook for about 3 minutes per side, or until golden brown and cooked through. 4. In a medium bowl, combine the pineapple, red onion, jalapeños, garlic, cilantro leaves, lime juice, and salt. Gently mix until all the ingredients are coated with the sauce.
  4. Grill or broil the pineapple salsa for 1-2 minutes until heated through. Serve alongside the grilled Mandarin fish for a delicious and healthy meal!
