Grilled Mandarin Fish Recipe

Ingredients:

1 Cod (or any white fish) fillet, about 1 1/2 pounds

1 Tbsp. sesame oil

1 Tbsp. vegetable oil

3 cloves garlic, minced fine

1/2 tsp. salt

1/4 tsp. sugar

1 red chili pepper, seeded and minced fine (optional) 1 green onion, sliced into thin rounds on the diagonal (optional)

Instructions:

Whisk together the sesame oil, vegetable oil, garlic, salt and sugar until the sugar has dissolved. Rinse the fish and pat dry with paper towels. Place the fish in a large resealable bag or glass baking dish. Pour the marinade over the fish, making sure to coat it on all sides. If using a bag, press out as much air as possible before sealing it shut. If using a dish, cover securely with plastic wrap. Marinate in the fridge for 30 minutes to 2 hours, turning once halfway through. Preheat your grill to medium-high heat (about 425°F). Remove the fish from the marinade (discard any leftover marinade) and place it on the grill. Grill for 4-5 minutes per side, or until cooked through. Serve garnished with fresh green onions if desired. Enjoy!
